Tasting Notes - Milk Chocolate, White Pear, Apricot, Peachy Acidity, Juicy Body with a lasting honey like sweetness

This is our first year carrying Toro De Oro from Peru. The name Toro De Oro, comes from Spanish word of mouth tales and myths of a golden bull that lived high up in mountain lakes and would leave pieces of gold behind in the surrounding caves. Legend says that Spanish conquistadors attempted to capture the bull, but were instead dragged into the bottom of the lake, never to be seen again. There are tales from as late as the 20th century of people seeing a golden bull shining under the moon by the aforementioned lake.

Grown in an altitude ranging from 1,650 to 2,000 meters in the department of Cajamarca, Toro De Oro has multiple farmers contributing to the production and value of this coffee. They process their coffee fully washed, with varying realms of bean fermentation ranging from open air tank storage to tightly sealed bags, lasting anywhere from 30 hours to 50 hours depending on the farmer. After fermentation, the beans are washed three times and set to dry on drying beds. This coffee is comprised of multiple varietals including Caturra, Bourbon, Typica, and Pache. Imported by our friends at Caravela.

For us at Switchback, the Toro De Oro represents the coming together of community to help foster excellence. May you find your Golden Bull in the lovely combination of smooth, milky chocolate and complex stone fruit like acidity!
